GF MyPlate2Yours Granola

Lynn Dugan - MyPlate2Yours

I am happy to share this gluten-free recipe so everyone can enjoy the delicious taste of MyPlate2Yours granola! Compared to the original, it introduces flax and chia to substitute for the Grapenuts. Since it makes 11 cups, you can share with your friends and family - you would make them so happy. You can also store it in an airtight container for at least a month. Enjoy!

Gluten-Free MyPlate2Yours Granola (makes 11 cups)

6 cups gluten-free oatmeal

1-1/4 cup slivered almonds

1-1/4 cup sunflower seeds

¼ cup chia seeds

¼ cup flaxseed

1/3 cup honey

1/2 cup vegetable cooking oil

1/3 cup apple juice

1-1/2 teaspoon vanilla

1 teaspoon salt

1 cup shredded coconut

1 cup dried cherries

Combine the first 5 ingredients.  Combine other ingredients (except coconut and dried fruit).  Pour over cereal mixture.  Mix to coat well.  Spread onto 2 greased baking sheets and bake at 325 degrees for 30 minutes.  After 15 minutes, add coconut and dried cherries. Return to oven. When finished, cool completely. Store in airtight container.  ENJOY!
