Raspberry Lemonade Coolers



The warm days of the season have prompted me to return to making some refreshing summer drinks. Fresh raspberries are used in this slightly sweet, mildly tart spritzer. Fresh mint from the garden is the perfect garnish for this drink. Enjoy!


Raspberry Lemonade Coolers (serves 2)

1 pint raspberries

1/3 cup fresh lemon juice

1 cup water

1 cup sparkling water or club soda

2 teaspoons honey

2 Mint sprigs, for garnish


Directions:

1. Place fruit, lemon juice and 1 cup water in a bowl. With a spoon, mash fruit to release flavor (muddle).

2. Strain liquid through a sieve into a bowl or large measuring cup, pressing the fruit gently with the back of a spoon to release all the juice.

3. Mix honey into the sparkling water. Pour ½ cup each into 2 large (16-ounce) glasses.

4. Distribute the fruited water into each of the glasses (about 1 cup each). Add ice to each glass. Garnish with mint sprig. Enjoy!
