Fresh Cucumber Garbanzo Salad with Parsley and Mint

No matter what's sizzling on the grill this season, this salad will complement it perfectly. The salad's fresh parsley, mint, and lemon zest nicely flavor the cucumber and garbanzo beans. Preparing this salad requires some fine chopping and dicing, which you can easily do with a sharp chef's knife.


When my chef friend Prisciliano Atenco first shared his creation with me, I was instantly hooked. I believe you will be as well! Thank you, Chef!


Fresh Cucumber Garbanzo Salad with Parsley and Mint (serves 4)

1 large English seedless cucumber, small diced

1 generous bunch flat leaf parsley, washed/dried/chopped fine

½ red onion, small diced

4 stems fresh mint, leaves removed and chopped fine

1 can garbanzo beans, rinsed

1 lemon, zested and juiced (1/4 cup)

1/3 cup olive oil

pinch of chili flakes

Salt and pepper, to taste

 

Combine first 5 ingredients with lemon zest in a medium bowl. In a separate bowl, combine lemon juice and olive oil. Season to taste with chili, salt and pepper. Pour dressing over salad and gently toss. Enjoy!
