Friends were coming for dinner and I hadn't planned for the appetizer. When I opened my fridge, pizza sauce and a zucchini were available and this recipe was created!
Zucchini Pizza Minis (makes 24 minis)
1 large zucchini, sliced into 1/4-inch discs (about 24)
1/2 cup pizza sauce
1/2 cup shredded mozzarella
Garlic powder
Salt
Olive oil spray
Preheat oven broiler. Place zucchini discs on baking sheet covered with foil. Spray lightly with olive oil and sprinkle lightly with garlic powder and salt.
Broil for about 4 minutes until zucchini starts to brown. Remove pan from oven and turn discs over. Top each with a teaspoon of both pizza sauce and cheese. Broil until cheese melts and gets golden in color, about 2 minutes. Remove to a serving plate; allow to cool slightly before serving. Enjoy!
